Here’s another yummy Pinterest discovery for your slow weekend breakfast. Healthy & Delish! I am obsessed with eggs & I love trying out new recipes on the weekend. I made it while I was home on holiday and it was a hit! Having said that it’s difficult to poach eggs for lots of people.
Anyway here’s what you need and how to make it!
2 slices of seeded bread
3 teaspoons olive oil, divided
3 cups chopped kale, stems removed
2 Cloves minced garlic
1/8 teaspoon salt, plus additional for seasoning
1/8 teaspoon pepper, plus additional for seasoning
1/8 teaspoon red pepper flakes
2 large free range organic eggs
feta cheese, crumbled
- Heat 2 teaspoons olive oil in a large pan on a medium heat. Add the kale, stir to coat, for about 5 minutes. Add the garlic, 1/8 teaspoon salt, 1/8 teaspoon pepper, and red pepper flakes. Stir and cook 1 additional minute. Remove from heat, stir in the feta cheese, then cover to keep warm.
- In a small pan, filled over half way with water to the boil. Once boiling lower heat to a simmer. Gently crack eggs into pan cook for about 3 minutes (depending on how you like your yolks).
- Toast bread in a toaster.
Place half of the kale on top of each toast, then top with a poached egg, season to taste and enjoy!
